Happy New Year! I hope all of you had a fun, exciting, and safe weekend. Nick and I went and ate a nice dinner at Babin’s Seafood House and it was delicious. This is a tradition we started our first NYE together and we look forward to it every year.
Another tradition that is a MUST do for me on New Year’s Day is to eat black eyed peas. This is a family tradition of mine and I eat them every January 1 for good luck in the new year! Nick and I make a pot of Black Eyed Peas every year. Here is the recipe…
1 Bag of Black Eyed Peas
3 Slices of Bacon
1 Green Bell Pepper
2 Cloves of Garlic
Corn Bread Mix
Soak the black eyed peas in water overnight – if you forget, a few hours is better than nothing
Chop all of the vegetables – I leave the bacon and the bell pepper in large pieces so they can be easily picked out
Take your bacon and put in the pot on the stove and start frying it – I use a cast iron pot
Once your bacon has produced some grease add your vegetables to the pot and let them cook for a few minutes
Drain your black eyed peas and add them to the pot
Add fresh water to the pot – enough to cover all of the ingredients
Bring to a low boil
Turn down the heat to low and cover
Let simmer for at least 3 hours to let the flavors meld together
Serve in a bowl with cornbread and enjoy!
